Spicy Crispy Spring Rolls
What you’ll need:
- 4 cups bean sprouts
- 1 cup red onion (diced)
- 8 cloves garlic (diced)
- 6-10 red chillies (depending on personal taste – stems removed. Thinly sliced)
- 2 large carrots (grated)
- ½ large cabbage (thoroughly chopped)
- 1 kilo ground pork (lean)
- 8 rashers crispy bacon (thoroughly chopped)
- 1 tbsp. smoked paprika
- 1 cup white vinegar
- 2 tbsp. ketchup
- 10 spring roll wrappers (lumpia wrappers are fine)
- Salt & black pepper to taste
- 3 cups vegetable oil
Heat a small amount of oil and crisp up the bacon, set aside, then brown the ground pork in the same oil.
Again, set aside the pork and sauté the onion, garlic, chillies, cabbage, carrot, sprouts, and paprika in the oil.
Allow both meats to cool, then thoroughly combine all of the ingredients (aside from the oil, vinegar, ketchup, and wrappers) in a large bowl.
Evenly distribute the mixture into two centimeter by 12 centimeter tubes 12 towards the bottom of each wrapper and then roll and set aside.
Heat the oil over a medium high heat (anything lower and the wrappers will become very greasy), then fry in batches of four or five until the wrappers become brown and crispy, turning once.
Allow excess oil to drain on kitchen towel, then add a small amount of black pepper to the vinegar and sit in the ketchup to use a dipping sauce. Now, how easy was that? And just you wait until you taste them!
