Rich Split Pea Soup

Pea SoupIngredients:

  • 1 large onion (diced)
  • 1 cup celery (chopped)
  • 1 cup carrots (chopped)
  • 2 tbsp. olive oil (extra virgin)
  • 1 tsp. thyme
  • 16 oz. dried split peas (rinsed)
  • 4 cups vegetable broth
  • 2 cups water (distilled)
  • 6 oz. Canadian bacon
  • ¼ tsp. black pepper (freshly cracked)

Preparation:

Sauté the celery, onion, and carrots in a pan until tender, add the thyme, then cook for one minute. Transfer to a slow cooker, add the water, broth, and split peas, and then cover before cooking on low fir seven to eight hours. Upon completion, cook the bacon while allowing the (now uncovered) soup to cool slightly, the process the soup until smooth, add the black pepper, and garnish with bacon.
