Green Chia and Avocado Pudding Recipe

What you’ll need:chia_pudding

  • 5 medium celery stalks
  • 1 medium cucumber
  • 1 red apple
  • 1 cup kale
  • 2 cm ginger root (peeled)
  • 3 tbsp chia seeds
  • 1 avocado

Chop all the ingredients (aside from the chia seeds and the avocado) and the place into a blender and combine thoroughly. Pour one cup of the juice into a bowl, add the chia seeds, then mix well.

Let it sit overnight in the fridge (covered), occasionally stirring so as to avoid lumps. Once it has thickened, garnish with some chunks of avocado and enjoy. (this will keep in the fridge for up to a week, but it’s best consumed within three days of making the juice.)
